You can also replace other ingredients in a veggie soup with leafy greens like spinach, or use fresh green leafy
vegetables instead of kale, and finish with fresh spinach and a sprinkle of Parmesan cheese. If veggie soup isn’t
enough for you, add bread or a salad to make it a hearty meal.
Vegetable soup ingredients and preparation
Ingredients: olive oil, salt, chopped onion, carrots, red pepper, tomatoes, garlic, sweet potato, oregano, red pepper,
vegetable broth, bay leaf, chopped green beans, zucchini, and chickpeas. Heat a little oil in a large pot, season with salt,
pepper, and chopped onion and cook, stirring, until softened, about 8 to 10 minutes.
Then add the yams and shredded carrots and cook for 2 minutes more.
Finishing the Vegetable Soup
Add the tomatoes, red pepper, oregano, garlic, stock, and bay leaf to the pot, cover, and simmer for at least 20 minutes.
Now add the garbanzo beans, zucchini, cherry tomatoes, and chickpeas, cover, and simmer for 10 to 15 minutes or until tender.
Then add the wine reduction and sliced onion, and simmer for another 5 minutes.
